Although Cuban and Puerto Rican cooking is somewhat similar
to both Spanish and Mexican cuisine, it is actually a unique tasty blend of
Spanish, African, Taino, and American influences. This cooking style uses
seasonings and ingredients indigenous to those areas such as coriander, papaya,
cacao, nispero, apio, plantains, and yampee. Locals call this cuisine "Cocina
Criolla."
